Breakfast burrito - a perfect morning energy boost

If you feel like trying something new for breakfast, this recipe for breakfast burrito is perfect for you. It needs a bit of preparation, but the energy you gain from it, nutrition value and most of all its incredible taste are worth every minute of it! Eggs are basically like little nutritional bombs, they contain a little bit of almost every nutrient you need. They are particularly rich in vitamins A, B2, B5, B12, some folic acid. They are a great source of proteins. Adding roasted potatoes to it, you get decent amount of vitamin C, B6, niacin and some important minerals. And with the breakfast sausage you get some extra energy and even more yummy taste.

Ingredients:

  • 5 whole wheat tortillas
  • 1 cup shredded cheddar cheese

For scrambled eggs:

  • 4 large eggs
  • 1 tablespoon unsweetened almond milk
  • salt and pepper, to taste
  • olive oil 

For roasted potatoes:

  • 1 large potato, cut in cubes
  • 1 teaspoon olive oil
  • 1 teaspoon garlic powder
  • smoked paprika, to taste
  • salt and pepper, to taste

For breakfast sausage:

  • 1/2 teaspoon olive oil
  • 1/2 teaspoon minced garlic
  • ¼ white onion, finely diced
  • 250g sliced breakfast sausage (pork or chicken or chorizo) 

Instructions:

  1. Start with the potatoes: preheat the oven to 200ºC and place a sheet of tin foil on a baking tray. Place the potato cubes on the baking tray, drizzle olive oil over themand season with paprika, garlic powder, salt and pepper to your liking. Toss to make sure everything is evenly coated. Roast for 30 minutes and toss half way through. Set aside.
  2. Get the scrambled eggs ready: heat a pan to medium/high heat and grease with olive oil. Crack 4 eggs into a medium size bowl, add the milk, season with salt and pepper. Whisk until well combined. Pour the mixture onto heated pan and scramble with spatula until fully cooked. Set aside.
  3. For the sausage heat some olive oil in askillet over medium/high heat, add white onion and minced garlic. Sauté for about a minute and add the breakfast sausage. Set aside.
  4. Time to heat the tortillas for a few seconds in a large pan -without any grease, just heat them for half a minute on each side. Transfer to a flat surface and spread scrambled eggs, roasted potatoes, breakfast sausage equally on each of the tortillas, add a sprinkle of cheese on top of your tortilla. Make the burritos by first folding two sides in and then rolling. Try to wrap each burrito very tight in tin foil, with no pockets of air, if you want to store them for later.
